This receipt would be a great breakfast meal. The Sweet Potato (yam) carries Vitamin A, fiber, Vitamin C, potassium, manganese, and beta-carotene in it. It have a little more calories then a regular potato, but it has more beta-cartene (the yellow/orange pigment color that carries Vitamin A. Vitamin A benefits for healthy skin and mucus membranes, our immune system, and good eye health and vision.) and double the fiber.
The fried egg carries protein, iron, vitamin B12, folate. One egg is only about 70 calories, with a great balance of 6 grams of protein and 5 grams of fat and can be a great source of food to help you build muscle and to slim down. Many might ask if the yoke should be removed. My answer to that is NO! Yoke is considered to consume good fats and calories, ones that tell your brain you are full.
If I had a choice to eat one egg ( 70 calories) or one 1 1/2 rice cakes ( 70 calories ) I would most certainly choose the egg! Why? Because eggs have protein and vitamins and rice cakes have only calories.
