Avocado Stuffed Burger with a Portabella Mushroom Roll

I promised I would assemble a Paleo Recipe and here it is!

Let’s Get Started…

Ingredients
  • 2 pounds of lean ground beef (98%)
  • 2 avocados
  • 1 cup sun-dried tomatoes
  • Juice of 1/2 a lemon
  • 1 lemon
  • 2 tablespoons black pepper
  • 2 Portabella Mushrooms for each burger
  • 3 ½ tablespoons balsamic vinegar
  • 2 tablespoons olive oil
Burger Instructions
  1. Your will need your stove at a medium high heat
  2. Put your ground beef in a large mixing bowl and add black pepper, and one lemon (squeeze)
  3. Mix well and then using your hands to form thin patties, all the same size (you need them thin because you will be using two of them to make one patty)
  4. In another mixing bowl add avocados, sun dried tomatoes, and lemon juice.
  5. Mash the avocado and mix ingredients well to get as smooth as possible.
  6. Place your avocado mixture on the bottoms of half of the burgers, make sure you leave room to seal the burgers without it leaking out
  7. Put your other patty over the top of your mixture and pinch the edges of your burgers together to seal all the way around
  8. Now place the burger on a skillet and cook for about 8 to 10 Minutes per side depending on the size and your stove. Ensure you cook evenly on both sides of the burger or you will end up with an undercooked and an overcooked side.
  9. Allow your burgers to cool down for 10 minutes and then serve.

Portabella Instructions

  1. Your will need your stove at a medium high heat
  2. Cut the stems off the caps of the portabella mushroom, then wash the caps.
  3. In a shallow bowl, combine the balsamic vinegar and olive oil.  Place mushrooms gill side down in the mixture. Let this sit for 5 min to absorb.
  4. Place the mushroom on a skillet gill side first for about 5 minutes or until they start to sweat.  Flip and grill 2-3 minutes more.
  5. Allow the caps to down for a bit then assemble your delicious burger. ( You may combine lettuce, tomato, onion, or any other vegetables you like with your burgers.
